Coconut Rice

Ingredients
- 1¾ cups water
- 1 can (1¾ cups) coconut milk
- ½ tsp. salt
- 2 cups jasmine rice
- 2 scallions, chopped (optional)
Instructions
- Place water, coconut milk and salt in medium saucepan. Mix well to break up any chunks of coconut cream.
- Bring to a boil, stir in rice, and lower heat to a simmer.
- Cover and simmer for 15-20 minutes, or until most of the liquid is absorbed.
- Remove from heat and allow to sit, covered, for another five minutes.
- Stir in scallions if using.
