Balsamic Caramelized Onions {vegan, grain free & gluten free}

Ingredients
  • 4 medium onions
  • 3 tablespoon olive oil
  • ⅓ cup balsamic vinegar
  • 2 tablespoon dry white wine
  • ½ tablespoon maple syrup
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • fresh thyme leaves for garnish
Directions
  1. Preheat oven to 400F. Cut onions in half from stem to root end but do not cut of the ends. Peel off outer layers and set onions aside.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, white whine, maple syrup, salt and pepper and pour into a 3-quart baking dish. Place onions cut side up into the baking dish, cover lightly with foil and bake for about 25 minutes.
  3. Remove foil, turn onions cut side down and continue to bake (uncovered) for another 25-30 minutes or until vinegar mix is thickened.
  4. Sprinkle with thyme and serve right away.
