Coconut Pancakes
Ingredients:
- 2 cups shredded coconut, sweetened
- 1/4 cup cooked corn
- 1/2 cup glutinous rice flour
- 1/4 cup water
- 1/2 tsp. jasmine or pandan or vanilla extract
Preparation:
1. Whisk all ingredients together in a bowl by hand.
2. Spoon a batter and cook on a greased pan over medium heat.
3. Cook until golden brown on the bottom, then flip and brown the other side.
