Coconut Rice

Coconut Rice

Ingredients
  • 1¾ cups water
  • 1 can (1¾ cups) coconut milk
  • ½ tsp. salt
  • 2 cups jasmine rice
  • 2 scallions, chopped (optional)
Instructions
  1. Place water, coconut milk and salt in medium saucepan. Mix well to break up any chunks of coconut cream.
  2. Bring to a boil, stir in rice, and lower heat to a simmer.
  3. Cover and simmer for 15-20 minutes, or until most of the liquid is absorbed.
  4. Remove from heat and allow to sit, covered, for another five minutes.
  5. Stir in scallions if using.
